The inspiration for our business began in our search for a sustainable way to make use of our beautiful Manitoba birch forest. Tapping our birch trees seemed an ideal way to use the trees year after year and still maintain the forest and the habitat for the animals that live there. In 2012 The Canadian Birch Company started its first season making birch syrup.<\/p>\n
Birch syrup is rich and bold – used for enhancing the flavour of foods with its fruity sweetness. Instead of comparing it to maple syrup we got to work exploring the true nature of this special and rare culinary find. We discovered the versatility of birch. From marinating meat and finishing vegetables to making sweet or savoury sauces, or flavouring cocktails, this nectar from the white tree elevates every food and drink to fabulous! <\/p>\n
